Cupuassu is a unique food combining epicatechin derivatives and 8-hydroxy-flavones.

Gastrointestinal distribution and metabolism of cupuassu flavonoids were studied.

Flavone conjugates released the respective aglycones with no further metabolism.

Procyanidin metabolism seems to be affected by the food matrix.

We identified the compounds that are thought to have biological effects in the colon.
