Phytochemical distribution in hull and cotyledon of adzuki bean (Vigna angularis L.) and mung bean (Vigna radiate L.), and their contribution to antioxidant, anti-inflammatory and anti-diabetic activities
Predominant phytochemicals distributed in hulls of mung bean and adzuki bean.

Bean hulls possessed much higher antioxidant capacities than cotyledons.
•
Hulls predominantly contributed phytochemicals except for tannins.
•
Hulls predominantly contributed antioxidant activities of whole beans.
•
Vitexin and isovitexin predominantly distributed in mung bean hull.
