Image analysis was applied to examine the browning degree of banana peels.

CIE Lab and G (green) values using image analysis showed high correlation coefficient with sensory test.

CIE a value using colorimeter showed high correlation coefficient with sensory test.

Image analysis was able to compare the browning degree of banana peels treated with different methods.
