Most post-harvest losses research focused on quantity loss. Storage structures cannot protect stored product from outside climatic conditions. High CHO, calorific value, crude protein and fat decline during storage. Fibre, ash, and major minerals content increased along storage duration. Nutritional insecurity and hidden dietary hunger for the society.
