Utilize kafirin based nanoparticle as novel stabilizer for Pickering emulsion.

Emulsions are stable against coalescence over a wide range of oil phase fraction.

Emulsion phase volume, droplet sizes and rheological properties were tunable by adjusting operation conditions.

Droplet interface structure were observed under optical microscopy and Cryo-SEM.

Relationship among microstructure, rheological properties and stabilization mechanism was proposed.
