Harvest and post-harvest conditions influencing macauba (Acrocomia aculeata) oil quality attributes

Was observed a significant increase in the mesocarp oil content of macauba fruits during storage.

The use of fungicide in postharvest was beneficial to maintaining the mesocarp oil quality.

The mesocarp oil has low free fatty acids content and high oxidative stability when these fruits are harvested in the plant or within seven days exposed in soil.
