We determine the effect of 1-MCP on sugar accumulation using hyperspectral imaging. We develop prediction models of sugar contents in contact kiwifruit and slices. We select some feature wavelengths to develop multispectral imaging system. We visualize glucose, fructose, and sucrose distributions in different tissues.
