More aged amaranth had lower non protein-N and degradability.

Increasing plant age reduced gas production, but increased methane proportion.

Advancing plant age reduced cellulolytic bacteria without effect on protozoa.
•
Higher N fertilizer decreased the adverse effect of growth stage on plant quality.
•
Increasing N fertilization enhanced in vitro ruminal cellulolytic bacteria.
