We studied temperature, aw and CO2 effects on Aspergillus flavus and aflatoxin on paddy.

Aflatoxin was positively correlated with incubation time and colony diameter.

Growth rates and aflatoxin were negatively correlated with CO2.

Growth rate and lag phase under modified atmosphere fitted a polynomial model.

The results demonstrate control of aflatoxin in paddy using modified atmosphere.
