We studied temperature, a_w and CO₂ effects on Aspergillus flavus and aflatoxin on paddy.

Aflatoxin was positively correlated with incubation time and colony diameter.

Growth rates and aflatoxin were negatively correlated with CO₂.

Growth rate and lag phase under modified atmosphere fitted a polynomial model.

The results demonstrate control of aflatoxin in paddy using modified atmosphere.
