Soft probe scanning electrochemical microscopy is ideal for apple peel scanning. Soft probes slide non-invasively on the peel while keeping a constant working distance. The antioxidant activity can be mapped by using ferrocenemethanol as redox mediator. Naturally and artificially degraded antioxidant activity is visualized. The higher antioxidant activity of peels compared to the flesh is confirmed.
