Oleic acid increases fluidity of gel phase lipid membranes. Oleic acid's degree of deprotonation & membrane charge can be tailored by solution pH. Apparent pKa of oleic acid in a gel phase DPPC membrane is 8.8–9.4. Topological defects in membranes results in additional hydrophobic interaction.
