A rapid UHPLC method for the reliable quantification of furosine in milk is presented. Separation time was considerably reduced from 7.75 min (HPLC) to 1.75 min (UHPLC). A dilution of indirectly heated ESL milk samples was found crucial for accurate results. Furosine amounts varied greatly within extended shelf life (ESL) milk samples.
