In order to develop a human milk fortifier thirty two different human milk samples were submitted to evaporation under vacuum. Sodium, calcium, phosphorus, protein, fat, and lactose levels were determined in the samples before and after evaporation and osmolality was measured. To remove excess lactose, 16 samples selected at random were submitted to one lactose precipitation and the remaining 16 were submitted to two lactose precipitations. After concentration, the nutrient levels increased on average 3 to 4 times, except for fat. After one lactose precipitation, mean lactose concentration decreased from 30.5 to 20.2 g/dl, and after two precipitations it decreased from 28.5 to 13.1 g/dl. By adding the concentrate to human milk a fully homologous diet for preterm infants was obtained.
