Heat-induced aggregate formation allowed improvement of surface activity and foaming properties of β-Lg. Further enhancement of foam lifetime resulted from pH-induced shielding of surface charge of β-Lg aggregates. Foamability positively correlated with rate of initial surface pressure increase. Foam stability positively correlated with surface dilatational elasticity. Within the system studied, maximum foam stability was not linked to minimum foam drainage.
