Bioactive carvacrol oil was encapsulated in oil-in-water droplets using ultrasonication. The concentration of carvacrol in dispersed MCT oil droplets significantly influences nanoemulsion stability. Lecithin nanoemulsion droplets resisted size increase, but Tween 20 nanoemulsions increased significantly in size over time. Lecithin interfaces were highly viscoelastic, directly correlating to the long-term stability of corresponding nanoemulsions.
