A novel endo-inulinase gene INU from Fusarium oxysporum was cloned. The C-terminal truncated TrINU has higher expression level than the full length INU. The stability of INU was improved by protease sites mutation. INU was high-level expressed in Pichia in pilot-scale bioreactor. The reaction parameters were optimized for oligofructoses preparation by INU.
