摘要
《烹饪化学》是烹饪工艺与营养的专业基础课,而《烹饪化学》实验课对培养学生的综合能力和学科素养具有重要的作用。我院在对烹饪化学实验课教学模式的摸索中,针对一些存在的问题在实验项目、实验模式、实验教学方法、实验课时和考核方式等方面进行了改革,取得了较好的教学效果,对提高学生解决实际问题、团队协作能力等综合素质起到积极作用。
"Cuisine chemistry" is a professional basic course of cooking technology and nutrition, and "cuisine chemistry" experiment course plays an important role in cultivating the students' comprehensive ability and academic literacy. According to the experimen tal project, model, teaching method, the class hour and assessment methods, we tried to resolve some problems in the exploration of the teaching mode of Chemistry Experiment Teaching of in cooking, and achieved the good teaching effect, which positive effect on the improvement of comprehensive quality of students to solve practical problems, the team cooperation ability.
