摘要
肠膜状明串珠菌Lm-1226发酵产右旋糖酐蔗糖酶,发酵液经过硫酸铵盐析分离提取右旋糖酐蔗糖酶,进行酶学性质研究。首先进行Lm-1226发酵产右旋糖酐蔗糖酶产酶进程研究,28h酶活力最高。盐析分离提取右旋糖酐蔗糖酶,硫酸铵饱和度15%时酶活力最高。酶学性质研究,右旋糖酐蔗糖酶作用的最适pH和温度分别为pH5.4和30~35℃;在55℃以下相对稳定,在pH4.6~p H8.0范围内相对稳定,具有较好的酸碱稳定性;。Mn2+具有显著的激活作用,对酶具有较强抑制作用。
